Fresh Squeezed Coconut Milk

At this cooking class in Battambang, Cambodia, we made everything from scratch including fresh coconut milk.  At the farmers market we got shredded coconut that we, wrapped in a cheese cloth, doused with a little bit of hot water, and then squeezed the milk out by hand.  So good and so easy…if only there were places in the states to get cheap, fresh, shredded coconut…the canned version comes nowhere close to this in terms of flavor.
