Curry Basics

With time to kill in Battambang, Cambodia, I decided to take  a cooking class that I saw advertised on a board outside of my hotel – 5 hours of cooking for $8…best deal ever!  The class began with a field trip to the market (see previous photos).  This photo is of the ingredients we picked up to make  curry: chili, kaffir lime leaf, galangal, fresh turmeric, garlic, lemon grass, and fingerroot.  Using these ingredients we made fresh curry paste from scratch…probably some of the most amazing food I have ever had.
